Starting the School Year Right

Well, Dylan’s first day of “big girl” school arrived this morning. She was SO excited from the moment she woke up to get dressed, pack her backpack, and go play with her new friends in their new space at school. Luckily, we live right down the street from her school so, while I drove her today, most days we will likely walk her to and from school. I packed her afternoon snack in her new Bentgo lunch box.  She practiced this weekend opening and closing the little latches, so she is good to go.  I knew she would have a hard time waiting to see what was in her snack box, and sure enough, as soon as we got to the gate at school, she started rummaging around her bag and dug right in to see what goodies awaited her at snack time! She did beautifully at drop off. No tears at all – just a happy face and some waves for me and Daddy. 

In her Bentgo box, I packed some fresh strawberries, sliced cucumbers, raw baby carrots with Tzatziki Sauce as a dipping condiment, and left-over fried (gluten-free) pork chop.

The Tzatziki Sauce is naturally gluten free (I’ll be posting my recipe later this week) and the pork chop recipe was altered to be made gluten-free (I substituted gluten-free flour for the all-purpose flour and then made bread crumbs from stale gluten-free bread for the pork chop breading.)

I’m looking forward to using my new cookbooks (from my Back to School Lunch and Snack Supplies blog post) this year to send her to school with some yummy gluten-free snacks! If anyone has any great meal-prep or recipe ideas, please send them my way.
